Description
Veggie Bean Burgers
Ingredients
- 300g barlotti beans, cooked and mashed
- 400g potatoes, cooked and mashed
- 1 cloves of garlic, crushed
- 1 tablespoon sunflower oil
- pinch of ground cumin
- pinch of ground corriander
- pinch of chilli flakes
- 4 tablespoon sesame seeds or bread crumbs
- 1 teaspoon lemon juice
Instructions
- Mix all the ingredients (except for the sesame seeds), together in a bowl. Season to taste, with salt and pepper. Divide the mixture into 4 parts, shape into balls and flatten slightly. Coat in sesame seeds or breadcrumbs.
- Heat the oven to 200C. Drizzle the oil onto a baking tray. place the burgers on the tray, coat the bottoms with oil, turn over and coat again. Bake for 20 mins, turning over half way through.
Notes
Mashed potatoes can be replaces with mashed carrot, sweet potato, parsnip or swede. Tinned barlotti beans or chickpeas can be used.
