Vegetable Jeon Pancakes

A different take on the traditional pancake, this delicious Korean recipe is a welcomed way to use up or hide all types of veg


  • 1 carrot, grated
  • 500g swede, potato or other root vegetable, grated
  • 1 leek or courgette, copped or grated
  • 2 spring onions, finely chopped
  • 2 tablespoon flour
  • 1 egg, beaten
  • 1 teaspoon soy sauce
  • salt and pepper to taste


  1. Mix all ingredients into a bowl, ensure it is all evenly coated and wet with the egg and soy sauce
  2. Warm up oil in a skillet or frying pan
  3. Place a scoop of mixture about the size of your palm onto the skillet and spread out in an even layer so it is not too thick. Cook on each side until golden brown. Repeat until you've finished the mixture
  4. Serve warm with soy sauce or ginger dressing
