Description
A unique way to make turnips (or even swede) a main dish.
Ingredients
- 780g turnips, cubed, or use a mix of turnip and swede
- 57g butter
- 2 eggs, beaten
- 3 tablespoon flour
- 1 tablespoon packed brown sugar
- 1 tablespoon baking powder
- salt and pepper
- pinch of nutmeg
- 30g breadcrumbs
- 28g butter, melted
Instructions
- Butter a medium casserole dish and set aside. Preheat oven to 190 C.
- Cook the turnip in boiling water until tender. Drain and mash roughly by hand in the pot.
- Add butter and eggs to the pot and beat well.
- In a small bowl, combine flour, sugar, baking powder, seasoning and nutmeg.
- Stir into the turnip mixture.
- Pour the entire mixture into the buttered casserole dish.
- Mix breadcrumbs and the melted butter together to form a crumble. Sprinkle on top of the turnip mixture.
- Bake for 25 minutes or until light brown on top.
