Description

Tomato sauce from tomato paradise

Ingredients

  • 500g san marzano tomatoes, peeled, deseed and chopped
  • 1 red onion, finely chopped
  • 2 cloves of garlic, crushed
  • 1 celery stalk, finely chopped
  • 1 carrot, finely chopped
  • 4 tablespoon olive oil
  • 2 tablespoon flat leaf parsley, finely chopped
  • 2 tablespoon basil, chopped

Instructions

  • Heat 3 tablespoons of the olive oil in a large pan. Add the onion, celery, carrot, garlic and parsley, saute over a low heat till very soft, (20 to 30 mins). Stir from time to time to prevent catching.
  • Add the chopped tomatoes, stir well and simmer for 45 mins till the tomatoes have broken down and a thick sauce has formed. Stir in the basil, the last tablespoon of olive oil and season to taste with salt and pepper.
  • Push through a sieve or moulin legume if a smooth sauce is required.
  • Notes

    The dept of flavour in this sauce depends on the soffritto, (combination of onion, carrot, celery, garlic and parsley). Slow cooking brings out the flavour and allows the veg to get soft enough to dissolve.
