Tomato Salsa

Ingredients

  • 3 salad onions
  • juice of one lime
  • 500g ripe cherry tomatoes
  • 1 green chili, or more if you like
  • 1 bunch of coriander
  • ¼ teaspoon salt

Instructions

Finely chop the salad onions and put them in a bowl along with the juice of ½ the lime. Chop the tomatoes into rough ½cm dice, and deseed and finely chop the chilli. Add to the bowl along with the roughly chopped coriander: you might want to add the chilli gradually, until you achieve the desired heat. Season to taste with salt, leave to sit for half an hour, then serve - this sauce relies on freshness of flavour, so don't make it too far ahead.
