Description

Toad in the hole with onion gravy

Ingredients

  • 450g sausages, pork or vegetarian
  • 175g plain flour
  • ¼ teaspoon salt
  • 2 eggs
  • 175ml milk
  • 120ml water
  • 450g onions, thinly sliced
  • 600ml stock, beef or vegetable
  • ½ teaspoon mustard
  • 1 teaspoon thyme leaves
  • 25g butter
  • ½ teaspoon sugar

Instructions

Batter: mix flour and salt in a bowl, beat in the egg, then gradually add the milk and water, whisking to a smooth batter. Set aside for 15 mins. Heat some oil in a large frying pan, brown the sausages, set aside.

Gravy: heat the butter in the same pan. Add onions and sugar and cook over a low heat for 30 mins. Stir in the flour, cook for a few seconds, add the stock, thyme leaves and mustard. Season and simmer for 20 mins. Pre heat oven to 200C. Heat the oil in a non stick roasting pan (28 x 20 cms), lay out the sausages, pour over the batter, cook in the oven for 30 mins, untill batter has risen and is golden brown.

Notes

If using vegetable stock, add a squeeze of tomato puree for colour.
