Transform your view of earthy beetroot with this flavourful Japanese recipe
Ingredients
- 3-4 beetroot
- 1 tsp maple syrup
- 2 tbsp miso
- 3 tbsp sesame oil
- 1 tbsp tahini
- 3 tbsp mirin
- Salt to taste
Instructions
- Preheat the oven to 200 C. Trim and scrub the beetroot, peel if desired. Cut the beetroot into quarters or manageble bitesize pieces, depending on size. Place them in a baking tray and set aside.
- In a small bowl, whisk together all of the other ingredients until throughly combined. Taste and adjust sweetness to your preference. Pour it over the beetroot and toss to coat.
- Place the baking tray in the oven and roast until the beetroot is tender, about 30-40 minutes.
