Transform your view of earthy beetroot with this flavourful Japanese recipe

Ingredients

  • 3-4 beetroot
  • 1 tsp maple syrup
  • 2 tbsp miso
  • 3 tbsp sesame oil
  • 1 tbsp tahini
  • 3 tbsp mirin
  • Salt to taste

Instructions

  1. Preheat the oven to 200 C. Trim and scrub the beetroot, peel if desired. Cut the beetroot into quarters or manageble bitesize pieces, depending on size. Place them in a baking tray and set aside.
  2. In a small bowl, whisk together all of the other ingredients until throughly combined. Taste and adjust sweetness to your preference. Pour it over the beetroot and toss to coat.
  3. Place the baking tray in the oven and roast until the beetroot is tender, about 30-40 minutes.
