Description

Swede-ish salad

Ingredients

  • 2 swedes, peeled and cut into 1.5cm cubes
  • 220g bacon, chopped into 1.5cm cubes
  • 2 tablespoon olive oil
  • 1 cup onion, chopped
  • 0.666667 cup cider vinegar
  • 0.666667 cup water
  • 2 tablespoon sugar
  • 3 tablespoon flour
  • ½ teaspoon celery seeds
  • ¼ teaspoon freshly ground black pepper

Instructions

  1. Boil the swede cubes for approx 12 minutes, until cooked. Set aside.
  2. Fry the bacon in the olive oil until crisp. Take the bacon out of the oil and set aside.
  3. Fry the chopped onion in the oil until soft. Mix together flour, sugar, salt, celery seed, and pepper; blend into onion and fat over low heat.
  4. Boil one minute.
  5. Add vinegar and water to mix well.
  6. Pour over swede cubes and stir in bacon. Serve warm.
