Description

Sprout tops are one of the most flavoursome greens and they have the hint of a Brussels sprout with the texture of healthy greens

Ingredients

  • 750g sprout tops, stalks trimmed, washed and large leaves halved
  • 1 onion, thinly sliced
  • 50g butter
  • 125g smoked or unsmoked streaky bacon, rind removed and cut into small cubes
  • salt and pepper

Instructions

  1. Fill a small pot with water and set on the stove of medium-high heat a leave to come to a boil.
  2. Gently cook the onion and bacon in the butter in a covered saucepan for 4 - 5 minutes, stirring every so often, until soft. Remove from heat.
  3. Meanwhile, cook the sprout tops in the boiling water for 4 - 5 minutes until tender.
  4. Drain the sprouts, gently squeezing out any excess water.
  5. Toss the sprout tops with the onions and bacon.
  6. Season to taste with salt and pepper.

Notes

Pairs well with cabbage as a jacket potato filling, with a bit of grated cheese on top.
