Description
‘Nuta’ is a type of Japanese vinegared dish that is dressed with sweet miso sauce. It's healthy, flavorful and extremely easy to make. This dressing is tradionally paired with seafood, and works splendidly with squid, octopus or clams.
Ingredients
- 2 bunches of spring onions
- 2 tablespoon miso paste
- 1 tablespoon sugar
- 1 tablespoon vinegar
- ½ teaspoon Japanese mustard (karashi)
Instructions
- Clean the spring onion and cut in 5 or 7 cm pieces. Bring the water to a boil. Boil the spring onion for about 2 minutes.
- Scoop them with a mesh spoon and drain them fully. Put them in a mixing bowl until it cools down.
- Whilst it cools, mix together the miso paste, sugar, vinegar, and mustard to create the nuta-miso dressing.
- When all the ingredients are cooled, mix with the nuta-miso dressing and refridgerate for 20 min before serving.
Notes
If you add seafood, try adding 100g of squid. Cut the squid into 5 mm thick rings if it is not already prepared.. Use the same boiled water as the spring onions to cook the squid briefly for 1~2 minutes. Scoop the squid out again to let it cool and add it in at step 4.
