Spiced Swede Cake
Ingredients
- 375 mg flour
- 50 mg brown muscovado sugar
- ½ teaspoon baking powder
- ½ teaspoon baking soda
- ¾ teaspoon ground cardamom
- ½ teaspoon salt
- ¾ teaspoon cinnamon
- ¾ teaspoon allspice
- 1 egg
- 1 cup swede, peeled and grated
- ¼ cup vegetable oil
- ½ cup milk
- ½ cup golden syrup
Instructions
In medium bowl, combine 1-1/2 cups (375 mL) all-purpose flour, 1/4 cup (50 mL) packed brown sugar, the spices, 1/2 tsp (2 mL) each salt, baking powder and baking soda. Stir in 1 cup (250 mL) grated peeled swede. In small bowl, lightly beat 1 egg; add 1/4 cup (50 mL) vegetable oil and 1/2 cup (125 mL) each golden syrup and milk. Stir liquid mixture into dry mixture. Pour into greased 8-inch (2 L) square baking pan. Bake in 350°F (180°C) oven for 30 minutes or until toothpick inserted in centre comes out clean. Cool on wire rack. Ice with cream cheese frosting.
