Shepherd's Pie with a cauliflower topping

Ingredients

  • 1 cauliflower, chopped into florets
  • 4 tablespoon fat ie. lard/tallow/ghee/coconut oil
  • 1 onion, diced
  • 2 celery, stalks ficed
  • 2 carrots, ficed
  • 2 cloves of garlick minced
  • 1 lb beef or lamb mince
  • ⅓ cup stock
  • 1 tablespoon tomato sauce or paste
  • 2 tablespoon parsley, chopped
  • pinch of salt and pepper
  • ½ cup cheese

Instructions

  1. Preheat oven to 200C and grease a casserole dish
  2. Steam or boil cauliflower
  3. Heat 2 tablespoons of fat over medium heat
  4. Add onion, celery, carrots, garlic and cook until softened (approx 5 min)
  5. Add meat and cook until brown
  6. Add stock to keep mixture wet
  7. Add tomato sauce/paste, parsley, salt and pepper and simmer
  8. Drain the cauliflower, puree until smooth
  9. Add 2 tablespoons fat and season
  10. Spread meat mixture in dish and top with cauliflower
  11. Cover with cheese
  12. Bake until brown and bubbly (approx 30 min)
