Description
Easy and simple roasted delicata squash
Ingredients
- 1 delicata squash, thinly sliced into rings or half moons
- 1 red onion, thinly sliced
- 1 rosemary sprig, chopped
- 2 tablespoon olive oil
Instructions
- Preheat the over to 180 C. Toss the thinly sliced squash pieces and rosemary togther in a bowl with the olive oil, ensuring the squash is well coated. Season to taste with salt and pepper.
- Spread out on a baking tray in a single layer, and roast in the oven for 20 minutes, until the squash are fork tender. Check and turn the veg half way through to ensure even cooking.
Notes
Remove the seeds from the squash before cooking, if they are large or hard.
