Description
A delicious veg curry with an unsuspecting addition - rhubarb!
Ingredients
- 1 onion
- 3 cloves garlic, crushed
- 3 rhubarb stalks. Add more if smaller in size
- 1 aubergine
- 2 teaspoon garam masala, or mix together 1 tsp ground coriander, 1 tps cumin and 2 tsp paprika
- ½ teaspoon tumeric
- 450ml vegetable stock
- 250g lentils
- 1 lime
- 250ml yoghurt
- 250g rice
Instructions
- Fry the onion and garlic until the onion is soft
- Add the garam masala and turmeric and coat the onions
- Add in the rhubarb, aubergine, lentils and veg stock
- Simmer for 10 to 15 minutes until the veg is just soft and lentils are cooked through. Add more veg stock if required.
- Grate the zest of one lime into the yogurt and mix well
- Squeeze the juice of one-half of the lime into the lentils and add salt and pepper to taste. Serve with a side of rice and zested yogurt.
