Description

Rainbow carrots with a honey glaze

Ingredients

  • 300g rainbow carrots, peeled and sliced on the bias
  • 1 teaspoon fresh ginger, grated
  • 1 teaspoon honey
  • pinch of chilli powder
  • 25g butter

Instructions

Blanch carrots in salted water. When just tender remove and place into hot sauté pan with a little of the blanching water. Add the honey and butter and ginger and sauté. The butter will emulsify with the water to create a glaze. Add the chilli powder and toss. Season with salt and pepper.
