Description

Ginger, Tofu, Pork, Pak Choi Ankake Donburi style - served over rice

Ingredients

  • 3 pak choi
  • 4 tablespoon sesame oil
  • 40g sliced ginger
  • 500g minced pork
  • 400g diced tofu
  • 4 tablespoon soy sauce
  • 4 tablespoon mirin
  • 4 tablespoon sake or white wine
  • 2 tablespoon honey or soft brown sugar
  • pinch of salt
  • pinch of corn starch
  • 100ml water

Instructions

  1. Put sesame oil in a pan over low heat, and add sliced ginger
  2. Once ginger is starting to cook, turn heat to medium-high and add minced pork
  3. When pork is cooked thorugh, add tofu
  4. Combine in a small bowl soy sauce, mirin, sake or white wine, honey or brown sugar and salt to create a sauce. Mix well. Pour sauce into pan and cook for three minutes on high heat
  5. Add water to the pan and lay pak choi on top of tofu/pork mixture. Cover pan with a lid for three minutes to steam the pak choi
  6. Just before serving, add corn starch around edge of the pan and gently mix in
  7. Serve with grated ginger and finish with sesame oil on top. Shichimi Japanese Seven Spice is also a great topping or chill oil. Serve over rice to make it Donburi style.
