Description

This warming, satisfying soup is great on cold days, and is a perfect way to use up any backlog of onions.

Ingredients

  • 500g onions, peeled, halved and sliced
  • 25g butter
  • 2 tablespoon flour
  • 1.5litre water or veg stock
  • 1 tablespoon creme fraiche
  • 1 tablespoon brandy, optional
  • 4 slices of bread, such as sourdough or a baguette
  • 50g Gruyere cheese, grated

Instructions

  1. Gently melt the butter in a large pot. Add the onions, coat and turn to low. Cook gently for 30 mins, untill very tender.
  2. Stir in the flour, then add the stock, stir, bring to the boil and simmer for 30 mins.
  3. Add the creme fraiche and the brandy, bring back to a simmer. Check the seasoning.
  4. Toast the bread, sprinkle on the grated cheese and then grill till melted.
  5. Spoon the soup into 4 bowls and float the toast on top. Serve.
