Description
This warming, satisfying soup is great on cold days, and is a perfect way to use up any backlog of onions.
Ingredients
- 500g onions, peeled, halved and sliced
- 25g butter
- 2 tablespoon flour
- 1.5litre water or veg stock
- 1 tablespoon creme fraiche
- 1 tablespoon brandy, optional
- 4 slices of bread, such as sourdough or a baguette
- 50g Gruyere cheese, grated
Instructions
- Gently melt the butter in a large pot. Add the onions, coat and turn to low. Cook gently for 30 mins, untill very tender.
- Stir in the flour, then add the stock, stir, bring to the boil and simmer for 30 mins.
- Add the creme fraiche and the brandy, bring back to a simmer. Check the seasoning.
- Toast the bread, sprinkle on the grated cheese and then grill till melted.
- Spoon the soup into 4 bowls and float the toast on top. Serve.
