Grilled January King Cabbage with Tahini and Yoghurt Dressing
Make the most of January King Cabbage this winter – their purple tinged leaves will brighten up any plate and are a deliciously sweet and tender!
- ½ a January king cabbage
- 1 tsp grapeseed oil
- generous pinch of salt
FOR THE DRESSING:
- 2 tbsp tahini paste
- juice of 1 lemon
- 1 clove of garlic, crushed
- ½ TSP GROUND CUMIN
- 2 TBSP YOGHURT
Begin by making the dressing. Place all the ingredients in a bowl and stir until thick and smooth. Taste and add more salt or lemon if needed. If it looks too thick, add a little more yoghurt.
Cut the cabbage into wedges and place in a bowl. Pour over the grapeseed oil, add the salt and smother over the cabbage until evenly coated. Heat a grill pan over a medium flame. When the grill is very hot, place the cabbage onto the grill and cook through.
Remove from the grill and drizzle over the dressing. Serve warm.
