Description

Fennel Goma Salad

Ingredients

  • 1 fennel bulb
  • 150g tahini
  • 50g rice vinegar
  • 50g soy sauce
  • 50g honey or soft brown sugar

Instructions

  1. Thinly slice the whole fennel bulb, even the core
  2. In a bowl, mix fennel with sea salt and leave for 20-30 minute
  3. Meanwhile, make the Goma dressing. Combine tahini, rice vinegar, soy sauce, honey or brown sugar in a bowl. Mix well. If the sauce is too thick, add more vinegar to adjust
  4. Lightly rinse the fennel and salt mixture under water
  5. Mix the fennel with the Goma sauce and serve with a sprinkling of chilli flakes

Too much dressing for 1 large fennel bulb, quarter of this amount would be fine. It's very tasty so I'll use the rest on another salad.
