Description
A crisp and fresh slaw, perfect with pork
Ingredients
- 1 small lemon, zested and juiced
- 3 tbsp extra virgin olive oil
- pinch of chilli flakes
- 1 shallot, finely chopped
- 2 fennel bulbs, finely slicked, fronds reserved
- 2 eating apples, thinly sliced
Instructions
Mix together the lemon zest and juice with the olive oil, chilli and some salt and pepper in a large bowl. Toss with the shallot, fennel and apple slices. Top with fronds, if desired.
