Description

An alternative to mango chutney using seasonal, fresh, apriocts.

Ingredients

  • 3 apricots, diced (1/2 cup, I use frozen)
  • 1 large red onion, peeled & diced
  • 1 Tbs fresh ginger, minced or grated
  • 5 cardamom pods grounded or 1 tsp ground cardamom
  • 1/4 tsp salt
  • 1/2 tsp cinnamon
  • 1 small green chile, seeded and diced, stem removed
  • 100g brown sugar
  • 120ml apple juice

Instructions

  1. Add all ingredients to a medium pot and bring to a simmer over medium heat. Once simmering, lower the heat and leave to cook for 45 minutes, uncovered.
  2. Let cool slightly. Transfer to an airtight container and store in the fridge. Use as you would mango chutney.
