Description
An alternative to mango chutney using seasonal, fresh, apriocts.
Ingredients
- 3 apricots, diced (1/2 cup, I use frozen)
- 1 large red onion, peeled & diced
- 1 Tbs fresh ginger, minced or grated
- 5 cardamom pods grounded or 1 tsp ground cardamom
- 1/4 tsp salt
- 1/2 tsp cinnamon
- 1 small green chile, seeded and diced, stem removed
- 100g brown sugar
- 120ml apple juice
Instructions
- Add all ingredients to a medium pot and bring to a simmer over medium heat. Once simmering, lower the heat and leave to cook for 45 minutes, uncovered.
- Let cool slightly. Transfer to an airtight container and store in the fridge. Use as you would mango chutney.
