Description
This is a delicious dish which can be served alongside a leafy salad. Can be eaten warm or cold.
Ingredients
- 1 crown prince squash, scored and drizzled with olive oil
- 1 clove garlic, finely chopped
- 250g chestnut mushrooms, chopped
- 3 tablespoon creme fraiche
Instructions
- Score and place squash on a baking tray, leave to cook for 40 mins
- Prepare mushrooms and then fry until golden brown
- Add in garlic into the pan and fry for a few mins
- Reduce the heat and add in the creme fraiche
- Remove the squash and dice into cubes
- Lay squash over the top of the mushrooms and serve
