Mushroom Soup
Ingredients
- 2 leeks, chopped
- 3 cloves garlic, chopped
- 50g butter
- 300g mushrooms, sliced
- 2 fresh thyme sprigs
- 600 ml chicken or vegetable stock
Instructions
Sweat the leeks and garlic in the butter for 4-5 minutes or until softened. Add the mushrooms and thyme and cook on high for 2-3 minutes. Pour over the chicken or vegetable stock and cook for five minutes. Blend in a food processor until smooth.
