Description

Coleslaw

Ingredients

  • 1 cabbage, very thinly sliced
  • 2 carrots, grated
  • 1 bunch spring onions, shredded
  • Course salt
  • 6 tablespoon mayonaise
  • 2 teaspoon grain mustard
  • 1 tablespoon yoghurt or sour cream or creme fraiche

Instructions

  1. Place the prepared vegetables in a colander and generously sprinkle with salt. Leave for half an hour then squeeze out any remaining water.
  2. Make the dressing mixing together the mayo, mustard,  yoghurt / sour cream / creme fraiche. Season with salt and pepper as desired 
  3. Mix vegetables and dressing together very well and serve

Notes

Variations: Replace the spring onions with half a red onion, finely sliced. 50/50 white and red cabbage
