Coleslaw
Ingredients
- 1 cabbage, very thinly sliced
- 2 carrots, grated
- 1 bunch spring onions, shredded
- Course salt
- 6 tablespoon mayonaise
- 2 teaspoon grain mustard
- 1 tablespoon yoghurt or sour cream or creme fraiche
Instructions
- Place the prepared vegetables in a colander and generously sprinkle with salt. Leave for half an hour then squeeze out any remaining water.
- Make the dressing mixing together the mayo, mustard, yoghurt / sour cream / creme fraiche. Season with salt and pepper as desired
- Mix vegetables and dressing together very well and serve
Notes
Variations: Replace the spring onions with half a red onion, finely sliced. 50/50 white and red cabbage
