Description
A tasty and moist cake for the glut of seasonal plums.
Ingredients
- 175g butter
- 175g caster sugar
- 175g self raising flour
- 3 eggs, lightly beaten
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 500g plums, halved and stoned
Instructions
- Preheat the oven to 160 degres. Line a 20cm round or 18cm square tin with grease proof paper
- Reserve 8 plum halves and chop the rest.
- In a bowl, cream the butter and sugar. Add the flour, baking powder, cinnamon, cocoa powder and the eggs. Mix till all the ingredients are incorporated.
- Fold in the chopped plums.
- Spoon the mixture into the prepared baking pan. Level out the batter and arrange the plum halves on top, with the cut sides up. Press the gently into the batter.
- Bake in the oven for 1 hour. Test with a skewer in the center to come out clean and check that it's done. Allow to cool in the pan for a few mintues before removing completely. Serve warm or at room temperature. Pairs excellently with a scoop of ice cream.
