Description

Chilled cucumber soup

Ingredients

  • 250 ml cold vegetable stock
  • 1 cucumber, peeled and diced
  • 2 green onions, chopped
  • 2 tablespoon fresh mint, chopped
  • 1 tablespoon lemon juice
  • 500 mg greek yogurt

Instructions

In a food processor, purée the cucumber, green onions, chopped fresh mint. Whisk in the fresh lemon juice, yogurt and stock. Refridgerate for an hour. Garnish with mint or croutons.
