Description
In this beautiful salad from Boots in the Oven, raw beet slices are paired with oranges, goat cheese, and roasted edamame.
Ingredients
- 3 medium beets, sliced 1.5mm to 3mm thickness (use a mandolin!) or as finely as you can cut it
- 1 orange, zested and supremed, juices reserved
- 150 g roasted or steamed edamame
- 60 g soft goat cheese
- 2 T extra virgin olive oil
- 1 T lemon juice
- salt and pepper
Instructions
- Whisk the reserved orange juice, lemon juice and a pinch of salt together until salt dissolves. Continue to whisk while drizzling in olive oil.
- Toss beets with the dressing.
- Arrange all of the remaining ingredients on a platter and top with extra dressing and fresh black pepper as desired. Eat and enjoy!
