Beet and Caramelised Onion Tart

Ingredients

  • 175g wholemeal flour
  • 100g porridge oats
  • 100g butter
  • 100g carrots, grated
  • 3 onions, sliced
  • 3 beetroots, peeled and grated
  • 3 eggs
  • 250 ml milk

Instructions

Preheat oven to 180C. In a food processor, pulse flour, oats and butter until crumb-like. Add carrot and process until mixture comes together to form a ball. Roll out pastry and line a metal 25cm pizza dish or shallow tart case and chill. Cook onions in oil until beginning to caramelise (15-20 minutes). Place beetroot in pastry case and cover with onions. Whisk eggs and milk and season. Pour over onions and beetroot. Bake for 15 minutes, then lower to 160C and bake for a further 40 minutes or until set and golden
