Vegetable and Feta Salad

Ingredients

1 T
butter
1 clv
garlic (finely chopped)
400 g
carrots (roasted, leftovers are good to use)
400 g
parsnips (roasted, leftovers are good to use)
1 1⁄2 T
olive oil
1⁄2
lemon (grated zest and lemon juice)
1 bn
parsley (small bunch flat-leaf, leaves choppped)
1 bn
mint (leaves chopped)
100 g
feta (crumbled)

Instructions

1. Heat the butter in a large saute pan over a medium heat. Fry the garlic for a couple of minutes before adding the vegetables. Fry for a few more minutes until warmed through. 2. Meanwhile, whisk together the oil, lemon zest and juice, then season to taste. Add to the pan to warm through. Transfer the vegetables to a serving plate and stir through the herbs and crumbled feta.
