Description

Tomato sauce from tomato paradise

Ingredients

500 g
san marzano tomatoes (peel, deseed and chop)
1
red onion (finely chopped)
2 clv
garlic (crushed)

celery stalk (finely chopped)

carrot (finely chopped)

olive oil
2 T
flat leaf parsley (finely chopped)
2 T
basil (chopped)

Instructions

Heat 3 tablespoons of the olive oil in a large pan. Add the onion, celery, carrot, garlic and parsley, saute over a low heat till very soft, (20 to 30 mins). Stir from time to time to prevent catching.
Add the chopped tomatoes stir well and simmer for 45 mins till the tomatoes have broken down and a thick sauce has formed. Stir in the basil, the last tablespoon of olive oil and season to taste with salt and pepper.
Push through a sieve or mouli legume if a smooth sauce is require4d.

Notes

NOTES : The dept of flavour in this sauce depends on the soffritto, (combination of onion, carrot, celery, garlic and parsley). Slow cooking brings out the flavour and allows the veg to get soft enough to dissolve.
