Tomato Salsa

Ingredients

salad onions

lime (juice of)
500 g
ripe cherry tomatoes
1
green chili (or more if you want)
1 bn
coriander
1⁄4 t
salt

Instructions

Finely chop the salad onions and put them in a bowl along with the juice of ½ the lime. Chop the tomatoes into rough ½cm dice, and deseed and finely chop the chilli. Add to the bowl along with the roughly chopped coriander: you might want to add the chilli gradually, until you achieve the desired heat.

Season to taste with salt, leave to sit for half an hour, then serve – this sauce relies on freshness of flavour, so don't make it too far ahead.
