Toad in the whole with onion gravy

Ingredients

sausages (good quality pork or vegetarian)

Plain flour

thyme leaves

Instructions

Batter: mix flour and salt in a bowl, beat in the egg, then gradually add the milk & water, whisking to a smooth batter. Set aside for 15 mins.  Heat some oil in a large frying pan, brown the sausages, set aside. Gravy: heat the butter in the same pan. Add onions and sugar and cook over a low heat for 30 mins. Stir inthe flour, cook for a few seconds, add the stock, thyme leaves and mustard. Season and simmer for 20 mins. Pre heat oven to 200c. Heat the oil in a non stick roasting pan (28 x 20 cms), lay out the sausages, pour over the batter, cook in the oven for 30 mins, untill batter has risen and is golden brown.

Notes

NOTES : If using vegetable stock, add a squeeze of tomato puree for colour.
