Description

Thai Green Curry Soup

Ingredients

onion (diced)

leek (sliced)

parsnip (diced)

savoy cabbage (sliced)

kale (sliced)

sugar

thai green curry paste
1 pn
chili flakes
200 g
coconut milk
1 ds
fish sauce (optional)
1 ds
lemon juice
1 bn
coriander (chopped)

Instructions

Soften the onion and leek in oil. Add the swede and sugar. Soften. Add the parsnip. Sweat on a low flame - don't allow to brown. Add chilli flakes and green curry paste Add the cabbage and kale. Add sufficient water (less for a thicker soup - you can always add more later). Simmer over low heat until swede is soft. Blend with hand blender. Add coconut milk and put back on low heat. Season with lemon juice and fish sauce. Serve sprinkled with chopped fresh coriander.
