Tempura squash with a lime dipping sauce.

Ingredients

squash (peeled and deseeded)

Instructions

Quarter the squash, toss in some vegetable or sunflower, season, spread on a tray and bake for 20 to 30 mins at 180c, dont allow it to get too soft. Set aside to cool. Mix the batter usng the flours and baking powder adding enough of the water so that the batter coats your finger but is not thick. Cut the squash into rectangles about 8m long and 1 - 2 cms thick. Heat the oil to 170-180c, dip the squash in the batter and cook till light golden and crispy. Mix the dip sauce and server the tempura immediately.

Notes

NOTES : Enough vegetable, sunflower or rapeseed oil for deep frying.
Use a mix of vegetables such as par boiled cauliflower, sweet potato, parsnip and carrot.
