Ingredients

corn ears (kernels removed)

onion

courgette (thinly sliced)

chilli (or chilli flakes)

curry powder
1⁄2 t
cumin
1⁄2 t
tumeric

tomatoes (chopped)

garlic
400 mg
vegetable stock

Instructions

Notes

  1. Heat the oil and fry the onion and garlic until soft.
  2. Add the curry powder and chillies to the onions and cook for a further 3 minutes.
  3. Add the corn, courgetter and tomatoes and fry for 3 minutes.
  4. Add 300ml veg stock, simmer for 5 to 10 minutes, adding more stock if needed
  5. Add the coriander leaves. Serve with rice/cooked lentils or naan.
