Simple beetroot soup

Ingredients

750 g
beetroot (cooked)

onion (diced)

thyme (sprigs)
2 T
olive oil

bay leaves

stock (!Millilitre chicken or vegetable)

Instructions

Warm the oil in a pan and saute the onion till soft, about 10 mins. Dice the cooked beetroot and add to the pan with the herbs and stock. bring to the boil and simmer for 10 mins. Discard the herbs and puree, season to taste. Serve with creme fraiche and chopped chives.
