Shepherd's Pie with a Cauliflower topping

Ingredients

cauliflower (Chopped into florets)
4 T
Fat (Lard/Tallow/Ghee/Coconut Oil)

onion (Small, diced)

Celery Stalks (Diced)

carrots (Diced)
2 clv
garlic (Minced)
1 lb
Beef or Lamb (Minced)
1⁄3 c
stock
1 T
Tomato sauce or paste
2 T
parsley (Chopped)

salt
1 pn
pepper
1⁄2 c
Cheese

Instructions

Preheat oven to 200C and grease casserole dish
Steam or boil cauliflower
Heat 2 tablespoons of fat over medium hea
Add onion, celery, carrots, garlic and cook until softened (approx 5 min)
Add meat and cook until brown
Add stock to keep mixture wet
Add tomato sauce/paste, parsley, salt and pepper and simmer
Drain the cauliflower, puree until smooth
Add 2 tablespoons fat and season
Spread meat mixture in dish and top with cauliflower
Cover with cheese
Bake until brown and bubbly (approx 30 min)
