Gazpacho

Ingredients

Cucumber (small, peeled and chopped)
2 clv
garlic (chopped)
200 g
breadcrumbs (wholemeal)
3 T
white wine vinegar
3 T
olive oil
2 t
salt
1⁄2 T
tomato puree
500
water (!Millilitre )
500 g
tomatoes (peeled and chopped)

Instructions

Put all the ingredients, except the water, in a bowl and mix. Puree in batches in a blender till smooth. Add water while in the blender to help blend. Transfer to a clean bowl, adjust seasoning  and chill for up to 2 hours. Add ice cubes and more water if too thick, and serve. Garnish with croutons, chopped spring onion or chopped corriander.
