Description

The trick of this salad is to slice the courgette as thinly as possible, a mandoline works best.

Ingredients

courgettes
1 bn
rocket (Washed)
1 bn
basil (Leaves only)
1
lemon (Juiced)
2 T
parmesan (Generous amount - finely grated)
6 T
extra virgin olive oil

Instructions

1. Make the dressing by mixing the lemon juice, olive oil and parmesan in a jug and season with salt & pepper.

2. Finely slice the courgette at an angle and put in a bowl.

3. Mix in the rocket, basil and enough dressing to coat. Dont overdo it with th edressing as it will all go soggy.

4. Check seasoning and serve.
