Chilled cucumber soup (2)

Ingredients

Small onion (finely chopped)

small cucumbers (peeled, halved, deseeded and chopped)

knob of butter

milk (!Millilitre heated)

Instructions

Melt the bgutter in a saucepan, add the onion and cucumber, cover and cook gently for 5 minutes. Stir in the flour, cook for 2 minutes, stirring constantly. Remove from the heat and gradually stir in the milk and stock. Return to the heat and season with salt, pepper and the nutmeg, bring to the boil and simmer for up to 20 minutes. Puree the soup, it should be the consistency of single cream. If too thick thin with some milk. Cool and then chill for at least 2 hours. Adjust the seasoning and serve with a swirl of single cream and/or chopped fresh mint.
