Description

Beetroot and Apple muffins

Ingredients

275 g
self raising flour
1 T
baking powder
2 t
ground mixed spice
1 t
ground cinnamon

large eggs
125 g
melted butter
60 g
castor sugar
250 g
cooked beetroot (coarsely grated)

apples (coarsely grated)

milk (!Millilitre )

Instructions

Mix the dry ingredients together in a large bowl. In a separate bowl wisk together the eggs, butter, milk and sugar and lightly mix into dry ingredients. Dont over mix, it doesnt have to be smooth. Fold in the grated apple and beeetroot. Line a muffin tin with paper cases and spoon into the cases. Cook in preheated oven at 200 for 20 to 25 minutes. 

Notes

NOTES : For extra crunch make a crumble mix of 75g each of flour, demerara sugar and chopped hazelnuts, mixed with 40g of butter, and sprinkle on top of the muffins before cooking.
