Beet and Caramelised Onion Tart

Ingredients

Wholemeal Flour
100 g
Porridge Oats
100 g
butter
100 g
carrots (Grated)

onions (Large, sliced)

beetroot (Medium, peeled, grated)

Eggs (Medium)
250 ml
milk

Instructions

Preheat oven to 180C In a food processor, pulse flour, oats and butter until crumb-like Add carrot and process utnil mixture comes together to form a ball Roll out pastry and line a metal 25cm pizza dish or shallow tart case and chill Cook onions in oil until beginning to caramelise (15-20 minutes) Place beetroot in pastry case and cover with onions Whisk eggs and milk and season Pour over onions and beetroot Bake for 15 minutes, then lower to 160C and bake for a further 40 minutes or until set and golden
