Description

Winter purslane, cucumber and yogurt salad

Ingredients

  • 1 cucumber, grated and excess water squeezed out
  • 125g winter purslane, large stems removed and shredded
  • 2 tablespoon mixed fresh herbs, such as mint, corriander or chervill
  • 250ml plain yogurt
  • 1 garlic clove, finely chopped
  • 2 tablespoon olive oil
  • 1 teaspoon ground coriander

Instructions

In a bowl, stir together the yogurt, olive oil, garlic, coriander and season to taste with salt and pepper. Add the remaining ingredients and stir. Chill before serving.
