Winter purslane, cucumber and yogurt salad
Ingredients
- 1 cucumber, grated and excess water squeezed out
- 125g winter purslane, large stems removed and shredded
- 2 tablespoon mixed fresh herbs, such as mint, corriander or chervill
- 250ml plain yogurt
- 1 garlic clove, finely chopped
- 2 tablespoon olive oil
- 1 teaspoon ground coriander
Instructions
In a bowl, stir together the yogurt, olive oil, garlic, coriander and season to taste with salt and pepper. Add the remaining ingredients and stir. Chill before serving.
