Description
A hearty weeknight dish
Ingredients
- 400g mushrooms
- 1 pepper
- 1 leek
- 1 tablespoon olive oil
- 1 teaspoon dried oregano
- salt and pepper, to taste
- 2 tablespoon creme fraiche
- 200g pasta, shape of your choosing
- 2 tablespoon grated parmesan
Instructions
- Preheat the oven to 200C, and put a pot of salted water to boil on the hob.
- Chop all the veg into bite size pieces and dress with oil, oregano and season with salt and pepper to your taste.
- Put it all into a large roasting dish and spread out in a single layer. Roast veggies for 20 minutes until tender.
- When the water comes to a boil, cooke the pasta according to package instructions. When ready, combine the pasta and veggies in one pot. Stir through the creme fraiche and top with parmesan.
