Cooking Up Vegan Feasts with the Healthy Living Platform

Let’s face it - most of us could do with eating more vegetables. In fact, eating more food that comes from plants is one of the best things you can do for your health - and for the health of our planet. This month is World Vegan Month - a chance to celebrate vegan food and to show how easy and tasty eating vegan food can be. If you’re a Local Greens customer chances are you’re used to cooking and eating with vegetables.

At the Healthy Living Platform our mission is to support the health and wellbeing of our whole community. We believe that everyone deserves access to healthy, nutritious food. Pre-COVID we used to run community sessions as a place to bring people together to cook, to share recipes from their own cultures and to learn something new.

The pandemic shook everything up. Our sessions had to be cancelled and with no idea how long the situation would last we tackled hunger head on by opening up our ‘Healthy Living Kitchen’. Here we cook surplus food into delicious vegetarian (mainly vegan) hot meals and deliver them directly to people’s doors. Part of our mission is to show people how easy and tasty it can be to eat more vegetables and plant-based food. Eating vegan can also be extremely budget friendly, if you cook from scratch using fresh vegetables and plenty of grains and pulses.

We are lucky enough to receive some surplus dried goods and fresh veg from a variety of sources - including Local Greens. Last week, we received kale, spinach, salad, onions, carrots and potatoes. Having so much delicious veg available allows us to cook a wide variety of different dishes from varied cultures. As time has gone on, our project has grown from simply offering hot meal deliveries and veg bags, to including recipe packs, toddler cooking classes and live cook-a-longs with our members where they share recipes from their cultures (check out Healthy Living Platform on YouTube to see them).
