Winter purslane, cucumber and yogurt salad.

Ingredients

Cucumber (grated and excess water squeezed out)

winter purslane (large stems removed and shredded)

mixed fresh herbs (mint, corriander or chervill)

plain yogurt (!Millilitre full fat)

garlic clove (finely chopped)

olive oil

Ground coriander

Instructions

In a bowl, stir together the yogurt, olive oil, garlic, coriander and season to taste with salt and pepper. Add the remaining ingredients and stir. Chill before serving.
