Description

Wild garlic pesto

Ingredients

50 g
Wild garlic
25 g
Shallot (roughly chopped)
25 g
walnuts or pine nuts
100
olive oil (!Millilitre )
25 g
parmesan (grated)

Instructions

Sort through the leaves, discard any tough stalks etc. Put all the ingredients (except the cheese) in a blender and blend till smooth, add the cheese, taste and adjust the seasoning with salt and or sugar. If storing, spoon into jars, press down leaving a gap at the top of the jar to add more olive oil. This will stop the pesto from oxidising. Store in the fridge.
