Description

Roasted delicata squash

Ingredients

1 oz
delicata squash (thinly sliced)
1 oz
red onion (thinly sliced)
1
rosemary sprig (chopped)
2 T
olive oil

Instructions

Toss the thinly sliced vegetables and rosemary togther in a bowl with the olive oil, ensuring the veg are coated. Season to taste with salt and pepper.
Spread out on a baking tray and cook roast in the oven at 180c for about twenty minuted. Check and turn the veg half way through to avoid catching and burning.
Serve immediatley with pasta and parmesan.

Notes

NOTES :
Remove the seeds from the squash before cooking, if they are large or hard.
