Rhubarb and lentil curry

Description

A delicious veg curry with an unsuspecting vegetable - the rhubarb! 

Ingredients

onion
3 clv
garlic (crushed)

rhubarb (add more if smaller in size)

aubergine ((or you can use 1tsp ground coriander and cumin and 2tsp paprika))
2 t
garam masala
1⁄2 t
tumeric
450 ml
veg stock
250 g
red lentils
1
lime
250 ml
yogurt plain
250 g
rice

Instructions

  1. Fry the onion and garlic until the onion is soft
  2. Add the garam masala and turmeric and coat the onions
  3. Add in the lentils, rhubarb, aubergine and veg stock
  4. Simmer for 10 to 15 minutes until the veg is just soft and lentils are cooked through.
  5. Cook the rice as per instructions
  6. Grate the zest of one lime into the yogurt
  7. Squeeze the juice of one-half into the lentil and serve with the rice and yogurt!

Notes

  • Sugar and salt and pepper to taste 
  • Add more veg stock if required
