Red Cabbage Braised with Vinegar and Bacon

Ingredients

450 g
streaky bacon (cut into 2.5cm pieces)
2 c
onions (chopped)
1
red cabbage (cored and finely slivered)

apples (Granny Smith or other tart apples, cored and cut into)
 
2.5cm cubes
1 c
sultanas
3⁄4 c
dry red wine
3⁄4 c
red wine vinegar
3 T
dark brown sugar
2 t
caraway seeds
1 t
dried thyme leaves
1⁄2 t
freshly ground black pepper
1⁄2 t
salt

Instructions

1. Cook the bacon in a large deep skillet or dutch oven over low heat for 15 minutes
2. Add the onions and cook until wilted, 10 minutes. Add remaining ingredients and toss well.
3. Cover the skillet, and cook over medium heat for 1 1/4 hours, stirring occasionally. If necessary, add a bit more liquid. Adjust the seasonings and serve hot.
